Vegan berry & chocolate muffins

Really simple vegan muffins!

Different countries uses different measuring units, if your country doesn't use the ones I'm using here you can google like "1 dl in cups" or whatever unit you may need.

Ingredients:
150 gram Vegan margarine
3,75 dl plantbased milk (I used soy)
4,5 dl sugar
5,25 dl flour
1 tsk baking soda
2 tsk vanilla sugar
Berries (I used blueberries and raspberries)
Vegan chocolate (I used dark "chocolate chunks" from Odense)

1. I recommend you to use an electric mixer throughout the entire recipe to make it easier. First you mix the margarine and sugar together.
2. Then you put the baking soda and vanilla sugar with the buttermix. Take half of the flour and half of the plantbased milk and mix until smooth. Then add the rest of the flour and milk and mix until smooth.
3. Put the batter in muffin pans or moulds, add the desirable amount of berries, cover with some more batter and sprinkle some chocolate on top.
4. Bake in the middle of the oven at 175° C for 15-25 minutes (depending on the size).

To test if they're done you can use a toothpick to pick a hole in one muffin, if the toothpick comes up clean (with no batter on) they're done! 🙂
