Simple vegan noodle soup

Super easy noodle soup filled with your favorite veggies!

20 minutes, 4-6 portions.

4 peeled carrots
1 small red chili pepper
150 g green beans / sugar snaps or similar
5 big button mushrooms
1 small leek
1 small zucchini
200 g broccoli
2-3 tsp sesame oil
2 tbsp soy sauce
Vegetable or umami stock
1 litre water
Rice noodles
Salt, white pepper

How to:
1. Boil the water with the stock and  slice all the vegetables (the way you want them).
2. Start by boiling the carrots and the mushrooms and add the rest of the vegetables after 5 minutes. Boil for at least 5 more minutes or until it's ready.
3. Boil the rice noodles seperately.
4. Add the spices, soy sauce and sesame oil. Taste and add more if needed.
5. Serve!

I added something called "rostad lök" on mine but I can't seem to find the English word Laughing out loud It's like roasted / toasted onion? Maybe that's just a weird Swedish thing?

If you don't like some of the vegetables or if you want something else, just mix it up and switch the ingredients!

If you use dried mushrooms instead the dish gets a lot more (natural) umami
