Vegan raw bars

Image 1. Click to open in original size.

~ 70 minutes, 2 bars.

Ingredients:
50g fresh dates
25g cashews
25g almonds
1 tbsp cacao
Pumpkin seeds

How to:
1. Finely chop the nuts. Remove the pits from the dates and chop the dates.
2. Mix everything with your hands for crunchy texture or with a mixer to get rid of all the crunch. If needed, add a little water.
3. Use a form with parchment paper and press down the dough. Let it stand in the fridge for at least 1 hour.
4. Cut into 2 pieces and wrap with parchment paper (unless you're gonna eat them right away!)

What do you use as a form?

I used a square oven form but I kind of mushed them together when I was going to cut them so I formed them with my hands instead.

Can this bar replace a meal?

I think you have to eat a couple of them to get the energy you need from a meal.

#3 No, I wouldn't say that this bar should replace a meal. It's just for energy, like a snack to eat in between meals. For it to be appropriate to replace a meal you should probably make sure it has enough of everything you need to eat. And as Niklas wrote, I don't think one bar even would be enough calories for a meal which would make you feel tired.

#5 Awesome! Please let me know if you make these and what you though about them!
