Vegan waffles with smoked tofu topping
This recipe was created by Mattias Kristiansson, chief editor of the Swedish Vegan magazine VEGO. The recipe and the image was published in his amazing book "Vegan på 21 dagar" ("Vegan in 21 days") which unfortunately will not be printed more. Of course you can have waffles for dinner! Especially if they are full of graham flour, oats and colorful vegetables.
GRAHAM WAFFLES
4½ dl of plant-based milk, e.g. unsweetened soy milk, oat or almond milk
1 teaspoon of white wine vinegar
3 dl graham flour
1 dl rolled oats
1 teaspoon baking soda
½ teaspoon of salt
2 carrots, shredded
½ zucchini, shredded
colza oil / rapeseed oil
SMOKED TOFU TOPPING
300 g smoked tofu, finely chopped
1 red pepper, finely chopped
4 sun dried tomatoes, finely chopped
1 yellow onion, finely chopped
2 dl herbal yogurt or crème fraiche, for example soya yoghurt or oatly iFraiche
2 tsp dried oregano
½ teaspoon of salt
black pepper
DO THIS!
Waffles: Mix together milk and white wine vinegar in a bowl. In another bowl stir graham flour, oatmeal, baking soda and salt together. Stir the liquid into the dry ingredients. Turn down the vegetables. Bake golden brown waffles in a waffle iron.
Smoked tofu topping: Mix all ingredients together. Serve with the waffles.

Wikipedia translated "havregryn" into "rolled oats" and "oatmeal" into "havregrynsgröt". Isn't that the right translation?
That sounds logical since “havregryn” are actually rolled or pressed.
