This recipe was created by Mattias Kristiansson, chief editor of the Swedish vegan magazine VEGO. The recipe and the image was published in his amazing book "Vegan på 21 dagar" ("Vegan in 21 days") which unfortunately will not be printed more. I have received permission from Mattias to publish recipes and images. The text below is copied from the book and translated from Swedish.

A dear old Swedish classic, but made with chickpeas instead of chicken. Use sweet chili sauce for those who like a little heat, or ketchup for a milder version.

2 cans of chickpeas of 400 g, about 6 dl cooked
2 bananas
1 dl peanuts
3 dl plantbased cream, e.g. oat or soy cream
1 dl ketchup or sweet chili sauce
Salt, black pepper

DO THIS!
Put the oven at 225 °C.
Drain and rince the chickpeas. Pour into an oven form. Slice the bananas and spread them evenly over the chickpeas together with the peanuts.
Mix together cream, ketchup / sweet chili sauce, salt and pepper in a bowl and then pour into the oven form. Bake everything for 15-20 minutes.
Serve with brown rice, wheat berry, quinoa, bulgur or another favorite of yours.
