What you’ll need:
Can full fat coconut milk
Liter vegetable broth
2 to 3 tablespoons Red curry paste
2 tablespoon soy sauce
1 tablespoon brown sugar
1 tablespoon fresh ginger
3 garlic cloves
Fresh green beans
1 bell pepper
Red onion or spring onion
How to make it:
Sauté chopped ginger, garlic, and coconut oil for 5 min.
Add red curry and sauté for 30 seconds.
Add vegetable broth and coconut milk.
Add sliced carrots, soy sauce and brown sugar.
Cook for 5 min.
Add green beans and water chestnuts to soup and cook for 10 min.
Meanwhile cook your rice noodles and drain.
Serve soup with rice noodles topped with cilantro, Thai basil, sliced bell pepper, onion, lime juice and hot sauce. Enjoy!
