Vegan Thai Curry Coconut Soup
What you’ll need:
- Rice noodles
- Can full fat coconut milk
- Coconut oil
- Liter vegetable broth
- 2 to 3 tablespoons Red curry paste
- 2 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon fresh ginger
- 3 garlic cloves
- Fresh green beans
- 1 carrot
- 1 bell pepper
- Water chestnuts
- Red onion or spring onion
- 2 limes Cilantro
- Thai basil
How to make it:
Sauté chopped ginger, garlic, and coconut oil for 5 min. Add red curry and sauté for 30 seconds. Add vegetable broth and coconut milk. Add sliced carrots, soy sauce and brown sugar. Cook for 5 min. Add green beans and water chestnuts to soup and cook for 10 min.
Meanwhile cook your rice noodles and drain. Serve soup with rice noodles topped with cilantro, Thai basil, sliced bell pepper, onion, lime juice and hot sauce.

It actually was, the first bowl of soup I had wasn’t especially good, that is why I added more curry, some soy sauce and brown sugar to it! I would also recommend some Vegan fish sauce 1 tsp. But I didn’t have any at the time when I made this but it would have been good!
