Raw vegan mango cheesecake

I made two of these raw vegan mango cheesecakes over the weekend! They turned out delicious. I would advise to half the amount of lime that is called for in the recipe like I did, since in my opinion 1/2 cup of lime is too sour.


Raw Mango Coconut Cheesecake (english version)
For the crust
1/2 cup shredded coconut
1/2 cup oats
1 1/2 cup soaked almonds
1/2 cup soaked dates
For the filling
1 1/2 cups soaked cashews
1/2 cup coconut cream
1/2 cup coconut milk
1/2 cup coconut oil
1/2 Cup lime juice
4 tbsp coconut sugar
pinch of grated tonka bean
For the mango swirl
1 ripe mango
1 tbsp lime Juice
1. To prepare the base, drain the soaked dates and almonds. Blend them in a food processor until they form a sticky dough. Then add the oats and shredded coconut and blend again until everything comes together. Press the dough onto the bottom of a 8“ or 9“ springform pan.
2. Now puree the mango with 1 tbsp lime juice. Save for later.
3. Place all the ingredients fort he filling into a blender and puree until the filling is very smooth and creamy. You might need to add some more coconut milk or lime juice. Pour the filling over the crust. Now pour the pureed mango on top and use a fork to create swirls.
Place the cake in the freezer and let it set for at least 4 hours.
